Ingredients 1 banana (sliced) 2 cups oats ½ cup yogurt (low fat, full fat, or coconut cream depending on your preference) 2 tbsps peanut butter 2 tbsps honey 1 tbsp chia seeds 1 tsp vanilla essence Preparation 1. Combine the oats and chia seeds in a large bowl. 2. Next, add the yogurt, honey and vanilla essence and mix well till there are no clumps. 3. Cover the mixture with cling film or a lid and leave in the fridge to cool overnight. 4. The next morning, remove the mixture from the fridge, spoon into two glass bowls or glasses and top with a dollop of peanut butter, sliced bananas and a drizzle of honey. If you’re planning on indulging, you can top the mixture off with coconut or chocolate shavings. OVERNIGHT OATS (MAKES 2)
